1 /4 cup bread crumbs
1/2 cup grated Parmesan cheese
2-3 medium zucchini, cut into 3-inch spears
1 egg, lightly beaten
Directions: Preheat the oven to 400 F. Line a cookie sheet or a jelly roll pan with foil, shiny side down. Spray or drizzle oil on the foil. Combine the bread crumbs, Parmesan, and salt in a medium bowl until well mixed. Dip the zucchini spears into the egg and then into the bread crumb mixture. Lay the spears on the prepared sheet pan. Place in the oven and bake for 5-7 minutes, then turn the spears over and return to the oven for another 5-7 minutes or until golden and crispy. Best served hot.
